Zucchini and Potato Pie

Ingredients

  • 1 lb potatoes (about 3 med)
  • 2 tbsp butter, divided
  • 2 eggs
  • 8 oz grated Mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large zucchini, grated
  • 1/4 cup minced onion
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp fine dry bread crumbs, divided

Preparation

Step 1

Cook potatoes in boiling water, lightly salted water about 25-30 minutes, until tender. Drain, peel and mash potatoes into large bowl using masher. Add 1 tbsp of the butter, eggs, cheeses, zucchini, onion, salt, and pepper; stir until well combined. Sprinkle will buttered 9 inch pie plate with 1 tbsp of the crumbs. Turn potato mixture into pie plate and smooth top with spatula. Sprinkle remaining tbsp of crumbs evening on top and dot with remaing butter. Bake at 400 for about 30 min, until pie is puffed and golden brown.
