Yellow Squash Casserole

  • 1 (8 oz) package bread crumbs
  • 1/2 cup butter, melted
  • 1 1/2 lb. yellow squash
  • 1 onion
  • 1 can water chestnuts; drained
  • 1 (8 oz) tub sour cream
  • 1 can cream of chicken soup
  • salt and pepper, to taste

Preparation

Step 1

Preheat oven to 350. Dice squash and boil until tender, about 10-12 min. Mix squash, onion, water chestnuts, sour cream, cream of chicken soup, 1/4 cup of butter and salt and pepper. In pan, put half of the breadcrumbs on the bottom, the pour in mixture. Next, place remaining breadcrumbs on top and the of butter. Bake uncovered for about 30-35 min.
