Bacon & Tomato Frittata

Ingredients
- 4 slices bacon
- 12 eggs
- 1/4 cup milk
- 1 tsp Dijon mustard
- ½ tsp salt
- 1/4 tsp pepper
- 1 green onion, sliced
- 4 oz cream cheese, cut into bits
- 1 small tomato, thinly sliced
- 1 tbsp Parmesan cheese

Preparation
Step 1
In a skillet, cook bacon over medium heat for 5 minutes or until opaque but not crisp. Drain on paper towels; chop and set aside. In bowl, whisk together eggs, milk, mustard, salt and pepper; stir in onion, cream cheese and chopped bacon. Pour into greased 10" pie plate. Bake at 350 for about 30 minutes or until puffed around edge and knife inserted in centre comes out clean. Arrange tomato over top; sprinkle with Parmesan cheese. Broil for about 4 minutes or until golden.
