  • 1

    cup margarine

  • 2

    cups sugar

  • 4

    beaten eggs

  • 1

    cup milk

  • 3

    cups flour

  • 2

    tsp. baking powder

  • pinch salt

  • grated rinds of 2 to 3 lemons

  • 1

    tsp. lemon extract


Cream butter. Add sugar and eggs. Add milk and flour combine with baking powder. Add salt rind and extract, mix by hand until combined. Bake in two greased loaf pans for 45 - 55 minutes at 350F. Do not underbake. Remove from oven and prick loaf all over. Spread juice of lemon and three quarters cup sugar of loaf. Leave in pans until cool. *to freeze wrap in wax paper and aluminum foil.
