Pico de Gallo

Ingredients

  • 4 medium roma tomatoes (1 lb) chopped
  • 2/3 cup chopped cucumber
  • 1/2 cup chopped yellow sweet pepper (1 small)
  • 1 green onion, chopped
  • 1 small jalapeno, seeded and finely chopped
  • 1 Tbsp. snipped fresh cilantro
  • 1/2 tea. finely shredded lime peel
  • 1 Tbsp. line juice
  • 1 Tbsp. olive oil
  • 1/2 tea. ground pasilla chile pepper or ancho chile pepper
  • 1/4 tea. salt

Preparation

Step 1

In a medium bowl, combine tomatoes, cucumber, sweet pepper, green onion, jalapeno, cilantro, lime peel, lime juice, olive oil, ground chile powder and salt.

Serve immediately or, if desired, cover and chill for up to 4 hours.
