Ingredients

  • 1 cup flour
  • 1/4 cup rolled oats
  • 1/4 cup packed brown sugar
  • 1 tsp. baking powder
  • 1/2 tsp. ground nutmeg
  • 3 Tbs. butter
  • 1/3 cup sugar
  • Milk
  • 1 Tbs. cornstarch
  • 1/4 cup water
  • 1/4 tsp. almond extract
  • 4 cups sliced, peeled peaches or sliced frozen unsweetened peaches
  • 1 egg
  • 1/3 cup chopped pecans
  • 1 Tbs. sugar
  • 1/2 tsp. ground cinnamon

Step 1

Stir together flour, rolled oats, brown sugar, baking powder and nutmeg. Cut in butter until the mixture resembles coarse crumbs, add pecans. Set aside. In saucepan, stir together the 1/3 cup sugar and cornstarch. Stir in water and almond extract. Add fruit. Cook and stir over medium heat until slightly thickened and bubbly. Reduce heat and keep mixture hot. In a small bowl, mix together egg and milk. Add all at once to a well in center of dry mixture. Stir until just moistened. Transfer hot filling to an ungreased 2 qt. square glass baking dish. Immediately spoon biscuit topping into eight mounds on top of the filling. Stir together the 1 Tbs. sugar and the cinnamon. Sprinkle over topping. Bake at 400 for 20 to 25 minutes or until toothpick in center of biscuit comes out clean. Serve with ice cream or whipped cream.
