Chili with Beans

Quick soak method: Rinse and sort beans in a large pot. To 1 pound of beans (2 cups) add 6 to 8 cups hot water. Bring to rapid boil; boil for 2 minutes. Remove from heat. Cover and let stand 1 hour. Drain soak water and rinse beans.

Ingredients
- 1 pound dry pinto beans
- 2 tsp brown sugar
- 2 cloves garlic, peeled
- 3 large cloves garlic, crushed
- 2 tbsp cooking oil
- 2 tomatoes, skinned, seeded and diced
- 1/4 cup chili powder (or more or less, to taste)
- 2 tsp dried oregano leaves
- 1 cup chopped onion
- 2 tsp salt
- 1/2 tsp ground cumin
Preparation
Step 1
Soak beans using the "quick soak" method with brown sugar and two cloves peeled garlic. Drain and set aside.
Saute 3 large cloves garlic and onion in the oil until golden. Remove from oil with slotted spoon, set aside. Add the rest of the ingredients to the oil, then add in sauteed garlic and onion. Simmer covered for 1 hour or until tender, stirring often. Correct salt according to taste. May be frozen.
