Easy Oatmeal Banana Bread

With less than a gram of fat per slice, this is a great way to get that sweet fix. And it is about 100 calories per slice and less than 7 grams of sugar. It is a lightened up Joy of Cooking recipe that is so easy too.

Ingredients

  • DRY INGREDIENTS:
  • 1 c oatmeal, dry
  • 1 c flour
  • 1 T baking powder
  • 1/2 tsp baking soda
  • 1/2 c brown sugar
  • 1 tsp cinnamon
  • WET INGREDIENTS:
  • 3 ripe bananas
  • 1 egg
  • 1 tsp vanilla
  • Butter flavored PAM for preparing the pan.

Preparation

Step 1

Use food processor or blender to chop oats until they resemble flour. Mix with all the dry ingredients.

Mash bananas and other wet ingredients together. (I use a food processor.) And add to the dry ingredients. Pour into a loaf pan sprayed with PAM.

Bake at 375 for 40 minutes. Turn out and cool before slicing. Don't worry! It is great warm too, if you can't wait that long.

Will make 16 generous slices, as shown in photo.
