Ingredients
- 3 to 4 medium fresh peaches, peeled and sliced, OR 1 can cling peach slices in juice or extra light syrup
- 1 bunch spinach
- 4-slices crisp cooked bacon crumbled
- 2 hard-cooked eggs, chopped or wedged
- 1 cup croutons
- 1 cup shredded Jack cheese
- 1 cup chopped onions
- 1 tablespoon oil
- 1/4 cup cider vinegar
- 1 tablespoon sugar
- 1/4 teaspoon garlic powdei
- 3/4 teaspoon onion powder
- 3/4 teaspoon celery salt
- 1 cup sour cream
- 1/4 cup chopped parsley
Preparation
Step 1
If using canned peaches, drain and reserve 1/4 cup liquid. Combine peaches, sp0inach, torn into bite sized pieces, bacon, eggs and croutons. Toss to mix well.
Top with cheese and set aside. Saute onions in oil. Stir in reserved peach liquid 9use a little water if using fresh pieces, vinegar, sugar, garlic powder, onion powder and celery salt. Mix well. Blend in sour cream and parsley. Spook over peach-spinach mixture and toss lightly to serve.
AS an alternative to the dressing, you can just crumble Feta or Blue cheese on spinach mixture.
