Eggplant Frittat with Sesame Seeds

Ingredients

  • 1 medium eggplant , ¾ lb.
  • Salt
  • 6 eggs
  • ½ cup milk
  • 1 tbs. butter
  • 1 tbs. sesame seeds

Preparation

Step 1

Preheat the oven to 350 degrees. Cut the eggplant into 1/3 inch thick slices. Heat a grill and cook the eggplant sliced until they are soft and lightly browned on both sides, about 8 minutes, turning one, season the eggplant with salt.

Break the eggs in a large bowl. Whisk them with milk and salt. Grease a round 8 inch pie pan or baking dish with butter, pour in the egg mixture. Lay the grilled eggplant slices in the pan; they will sink slightly into the eggs. Sprinkle with the sesame seeds over the eggs, bake for 20 minutes, or until the eggs are set and the top is lightly golden. Serve hot or at room temperature, cut into squares.
