Braised Pork Chops

Ingredients

  • 4 pork loin or rib chops, about 1/2 inch thick
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup pineapple juice, apple juice or water
  • Pan Gravy (recipe below)

Preparation

Step 1

Cook pork chops over medium heat until brown; drain. Sprinkle with salt and pepper. Reduce heat; pour pineapple juice on pork. Cover and simmer until done, 20 to 25 minutes.

Remove pork chops to warm platter; keep warm. Prepare Pan Gravy; serve with pork chops.

*_Pan Gravy_*:
Pour pork drippings into bowl, leaving brown particles in pan. Let fat rise to top of drippings; skim off fat, reserving 1/4 cup. Return reserved fat to pan. Stir in 1/4 cup all-purpose flour. Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat. Stir in 2 cups water. Heat to boiling, stirring constantly. Boil and stir 1 minutes. Sprinkle with salt and pepper
