Oven Fried Chicken

Ingredients

  • 2 cups buttermilk
  • 2 Tbsp. Dijon mustard
  • 2 tsp. salt
  • 2 tsp. hot pepper sauce
  • 1-1/2 tsp. garlic powder
  • 8 bone -in chicken breast halves,skin removed
  • 2 cups soft bread crumbs
  • 1 cup cornmeal
  • 2 Tbsp. canola oil
  • 1/2 tsp. poultry seasoning
  • 1/2 tsp. ground mustard
  • 1/2 tsp. paprika
  • 1/2 tsp. cayenne pepper
  • 1/4 tsp. dried oregano
  • 1/4 tsp.dried parsley flakes

Preparation

Step 1

In a large resealable plastic bag,combine the first five ingredients;add the chicken.Seal bag and turn to coat;refrigerate for at least 1 hour or overnight.
Drain and discard marinade.In a large reseable plastic bag,combine the bread crumbs,cornmeal,oil and seasonings.Add chicken,one piece at a time,and shake to coat.Place on a parchment paper-lined baking sheet.Bake at 400 degrees for 35-40 minutes or until a meat thermometer reads 170 degrees.
