Ingredients
- 4 large artichokes
- 2/3 c. plain, dry breadcrumbs
- 2 cloves garlic, minced
- 1T. minced flat leaf parsley
- 2T. grated Parmesan cheese
- pinch black pepper
- 6T. olive oil
- 1 1/2 c. water
- 3/4 tsp salt
Preparation
Step 1
1) lightly spray slow cooker with pam
2) remove stems from artichoke. tear off and discard top layer or two of tough outer leaves. cut off approx. 1/2 inch from top of artichoke. carefully open to expose the center. pull out any leaves tinged with purple.
3) prepare the filling by mixing all the dry ingredients except salt and 2T. of the olive oil.
4)stuff the chokes and sprinkle tops with remaining filling.
5) dissolve salt in water and pour into slow cooker to cover bottom
6) stand chokes upright in water, sprinkle with remaining olive oil
7) cover, cook on low 6-7 hours or until tender
