Ingredients
- 1 quart filtered or bottled water
- 1 cup SCHARFFEN BERGER Natural Unsweetened Cocoa powder
- 2 cups sugar
- 1/4 cup pure vanilla extract
- 1 pound SCHARFFEN BERGER 41% Cacao Milk Chocolate, chopped
- 1/4 cup corn syrup
- 1/4 teaspoon kosher salt
- 2 cups whole milk
- 4 egg whites beaten to soft peaks
Preparation
Step 1
Place chopped chocolate in a medium bowl and set aside. In a 3-quart stainless pot bring the water, cocoa powder, salt and sugar to a simmer, whisking to combine. Pour over the chocolate, wait 20 seconds and then whisk until chocolate is melted. Add corn syrup, vanilla, milk and mix well. Strain, then cool in refrigerator. Fold in egg whites just before spinning in an ice cream maker following the manufacturers directions.
