Sea Scallops, Curry Seared

  • 1/4 cup flour
  • 1 1/2 Tbsp corn meal
  • 2 1/2 Tbsp curry powder
  • 1/4 tsp white pepper
  • 1 Tbsp Canola oil
  • Sea Scallops 20 to 30/lb



Step 1

Mix flour, curry powder, corn meal and white pepper in a bowl. Heat oil in a skillet over medium high heat.

Dredge scallops in flour mixture, shaking off excess. Place scallops in hot oil and DON'T MOVE. Do not crowd the pan. Sear scallops 2 minutes. Turn scallops over and sear the other side until cooked through, about 1 1/2 minutes
