Ingredients

  • 1 tbsp. extra-virgin olive oil
  • 1/2 cup thinly sliced onion
  • 3 cloves garlic, finely chopped
  • 2 large chicken breasts, cooked and sliced
  • 8 strips of turkey bacon, cooked and cut in halves
  • 8 slices whole grain bread
  • 4 tbsp. mayonnaise
  • 8 slices provolone cheese
  • 4 tbsp. butter, softened

Preparation

Step 1

1. In a medium skillet, heat oil over medium heat. Add the onions and garlic and saute until caramelized, about 15-20 minutes. Remove from heat and set aside.

2. Preheat a grill pan or heavy bottom skillet over medium heat or use a panini press, following the mfg. instructions. Lay out 2 slices of bread per sandwich and spread each with mayonnaise. Build sandwiches by layering the bottom slices of breast with 2 slices of cheese, chicken, caramelized onions, bacon, and the top slice of bread. Lightly butter the outsides of the sandwich and place in the grill pan. Top the sandwich with a second skillet that's holding a couple of cans from your pantry to press the sandwiches down. Cook the sandwiches until crisp and golden, about 2-3 minutes per side.

3. Cut the sandwiches on the diagonal and serve hot.
