Ingredients
- 3 Cups uncooked pinto beans
- 1 large onion cut into eighths
- 2 cloves garlic, peeled
- Salt and pepper to taste
Preparation
Step 1
Pick and wash beans and place in
a 4-qt pot, and cover with water
to 2 inches above beans. Add onions,
salt pork (or bacon)and garlic. Bring
to boil, reduce heat, and simmer 3-4
hours or until tender,
Check every hour or so and add warm
water as needed. Do not stir beans
during the first 2 hours of cooking.
It is not necessary. If there is enough water
for beans to roll freely as they cook. This
method produces a pot of tender beans with
a nice broth. Add salt and pepper to taste in
the last hour of cooking.
