French Almond Macaroons

Ingredients

  • 3 cups almond flour
  • 3/4 cup sugar
  • 1/3 cup + 1 tablespoon egg whites (about 3)
  • 1 teaspoon almond extract
  • 1 pinch salt

Preparation

Step 1

Use food processor to mix flour, sugar and salt.

Remove strands from egg whites. Add whites and extract. Process until a paste wads around blade.

Scrape sides and process until stiff like pasta dough (about 5 seconds).

If mix is crumbly or dry, add water by drops through feed tube.

Use scant 2 tablespoons for each cookie. Roll into 24 1" balls. Space on baking sheet covered with parchment paper.

Flatten to about 1/2 " high circle.

Bake at 325 for 20 - 25 minutes until light golden brown.
