Roasted Garlic Dressing

Ingredients

  • 2 heads garlic
  • 1/2 cup extra virgin olive oil
  • 1/4 c. sherry vinegar
  • 2 T. lime juice
  • salt & pepper to taste

Preparation

Step 1

Wrap 2 heads of garlic in foil and bake in a 400° oven for 45 minutes to an hour, until soft.
Unwrap, and cut the top of the garlic head with scissors and gently squeeze out the soft, roasted garlic interior.
Blend with extra virgin olive oil, sherry vinegar and lime juice.
Season with salt and freshly ground pepper.
Spoon over bowl of the Looseleaf Blend lettuce to taste
