Ingredients

  • 1 cup chopped green beans

  • 1/3 cup chopped onion

  • 1/3 cup sliced mushrooms

  • 1/3 cup shredded carrots

  • 1/3 teaspoon chopped garlic

  • 1/2 teaspoon italiean herb seasoning mix

  • 1/4 cup low sodiom vegtable broth

  • 1/2 cup cooked whole grain penne

  • 3 oz water packed tuna

  • 2 tbsp finely chopped pecans

Directions

Saute 1 cup chopped green beans, 1∕3 cup chopped onion, 1∕3 cup sliced mushrooms, 1∕3 cup shredded carrots, 1/2 teaspoon chopped garlic, and 1/2 teaspoon no-salt Italian herb seasoning mix in 1/4 cup low-sodium vegetable broth. Once vegetables are tender, toss with 1/2 cup cooked whole-grain penne and 3 ounces of water-packed tuna. Transfer mixture to a small baking pan; sprinkle evenly with 2 tablespoons finely chopped pecans and bake at 400 for 10 to 12 minutes.
