Kentucky Pound Cake

Ingredients

  • Mix:
  • 1 1/2 cups oil
  • 2 cups sugar
  • 4 eggs
  • 2 1/2 cups self rising flour
  • 1 1/2 tsp. vanilla
  • 2 tbsp. hot water

Preparation

Step 1

Add:
1 large can crushed pineapple, drained (save juice)
1 cup pecans

Bake for 1 hour 10 minutes at 325 degrees or until done. Pour pineapple juice over it while it is warm.

Frosting:
8 oz. cream cheese
½ stick butter
1 box powdered sugar
2 tsp. vanilla
2 tsp. lemon juice

Beat cream cheese and butter until soft. Add other ingredients and spread on cake after it is completely cooled.
