Ingredients
- SAUCE:
- 15 1/2 oz Can salmon drained - remove skin & bone
- 1 C water
- 1/2 C butter
- 12 Drops hot pepper sauce
- 1/2 t salt
- 1 C all purpose flour
- 4 Eggs
- 2 T Finely minced fresh chives
- 1 C sour cream
- 1 T horseradish
- 2 t lemon juice
- 1/4 C sugar
- Salt
- Grated lemon peel

Step 1
Set salmon aside. In medium saucepan, combine water, butter, pepper sauce & salt. Bring to boil over hi heat. Add flour all at once. Cook, stirring over medium heat 3 minutes or until mixture leaves side of pan & thickens. Remove from heat. Beat in eggs, one at a time until mixture smooth & shiny. Add salmon & chives, stir until blended, let cool 15 minutes. Pour 2 1/2 inches of oil into a deep saucepan, heat oil to 370. Drop level teaspoon of mixture into hot oil. Fry turning occasionally til golden brown. Remove w/slotted spoon onto paper towel. Keep warm 200. Can be frozen, thawed & reheated 300, serve hot.
