Taco Casserole

Ingredients

  • 1 lb lean ground beef (or turkey)*
  • 1 small onion (diced)*
  • 1 pkg taco seasoning*
  • 1 can chili beans (Ranch Style)*
  • 1 can Ro-tel tomatoes (undrained)
  • 10.5 oz cream of chicken soup
  • 10-12 ounce bag tortilla chips (crushed and divided)
  • 2 cups shredded cheddar cheese (divided)
  • sour cream and salsa for serving

Preparation

Step 1

Preheat oven to 325 degrees.

In a large skillet, cook meat and onions until meat is no longer pink (if using beef, drain fat). Add taco seasoning (stir well to coat). *You can omit this step if using leftover taco fixings).

Stir in beans, tomatoes, and soup (and rice, if using any left over). Simmer over medium-low heat until everything is well combined and heated through.

Spray 9×13 casserole dish with cooking spray. Put down a layer of half of the crushed tortilla chips, followed by half of the meat/bean mixture, then half of the shredded cheese. Repeat layers of chips and meat. Hold off on the other half of the cheese until after baking. Cover with foil and bake for 20-30 minutes, or until bubbly.

Remove foil and add the remaining cheese. Let stand for 5-10 minutes before serving. Top with sour cream and salsa.
