Ingredients

  • 1 ½ c flour
  • ½ c sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 eggs
  • 1 ½ c mashed ripe banana (2 – 3 bananas)
  • ¼ c oil
  • ¼ c water
  • 1 ½ cups Post Selects Banana Nut Crunch cereal
  • 1 cup chopped Planters walnuts

Step 1

Preheat oven to 350. Mix flour, sugar, baking powder, baking soda, and salt in large bowl; set aside. Beat eggs in medium bowl. Add bananas, oil, and water; mix well. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal and walnuts.

Pour evenly into 4 greased miniature (5 ¾ x 3 ¼ inch) disposable foil loaf pans.

Bake 40 minutes or until toothpick inserted in centers comes out clean. Cool in pans 10 min. Remove from pans; place on wire racks. Cool completely.
