Italian Bread Salad

Ingredients

  • RED WINE VINAIGRETTE:
  • 5 cups Italian bread, torn into bite size pieces or cubed
  • 2 cups tomatoes, chopped
  • 1 cup (4 oz) mozzzarella cheese, cubed
  • 1/4 cup fresh basil, thinly sliced
  • 1/4 cup green onions, thinly sliced
  • 1/4 cup olive oil
  • 2 tbsp. red wine or raspberry vinegar
  • 1-2 cloves garlic, minced
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Preparation

Step 1

Toss bread, tomatoes, cheese, basil, and green onions together in a large bowl. In a jar with a tight-fitting lid, combine vinaigrette ingredients. Cover and shake until well mixed. Drizzle vinaigrette over bread salad and toss to coat.
