Ingredients
- Chocolate Glaze:
- 1/3 cup sifted cocoa
- 1/2 cup boiling water
- 2 oz unsweetened chocolate
- 4 tbsp butter, melted
- 1/2 cup vegetable oil
- 3 eggs
- 2 teaspoon vanilla
- 2 1/2 cups sugar
- 1 3/4 cup flour
- 1/2 tsp salt
- toasted coconut
- 3/4 cups semisweet chocolate chips
- 3 tbsp butter
- 1 tbsp light corn syrup
- 1/4 tsp vanilla extract
Preparation
Step 1
Preheat oven to 350 ºC.
Grease and flour pan.
In a small bowl, stir together cocoa, boiling water and chocolate until smooth and blended.
In a large bowl, blend butter, oil, eggs, sugar, and vanilla, mix well combined. Stir in chocolate mixture until well blended. Stir in flour until just combined.
Divide batter amongst wells, fill 2/3. Set remaining batter aside.
Bake 20-24 minutes or until tops are set. Remove from oven and cool 10 minutes in pan.
Wash, dry and prepare pan. Divide remaining batter among wells and bake as before.
Top cooled brownies with chocolate glaze and toasted coconute if desired.
Chocolate Glaze:
In a double boiler over hot, but not boiling wter, combine chocolate chips, butter, and corn syrup.
Stir until chips are melted and mixture is smooth, then add vanilla.
