black bean, corn and quinoa salad

Ingredients

  • 1 c water or veggie broth
  • 1/2 c quinoa, well rinsed
  • 1 tsp olive oil
  • 3 tsp lime juice
  • 1/4 tsp ground cumin
  • 1/8 tsp cayenne pepper
  • 1 tbsp minced scallions
  • 1 tbsp chopped cilantro
  • 1/4 c chopped green onion
  • 1 15oz can no-salt black beans; rinsed and drained
  • 1 ear fresh corn, cooked and kernels removed
  • 1 small tomato, chopped
  • 3/4 c chopped bell pepper
  • 2 tbsp canned diced green chiles
  • 1 c chopped mango or peach
  • lime wedges

Preparation

Step 1

In saucepan, bring water to a boil. add quinoa, cover and simmer on low heat until water is absorbed 10-15 mins. cool.
in small bowl, combine olive oil, lime juice, cumin, cayenne, scallions and cilantro. in a large bowl, combine cooled quinoa, green onions, beans, corn kernels, tomato, bell pepper, green chilies and mango or peach. add olive oil mixture and toss gently. season with salt and pepper. cover and refrigerate until cool. serve with lime wedges.
