- 1/2 cup hopped red pepper
- 2 medium tomatoes chopped
- 1 tsp salt

- 1 Tbls brown sugar
- 3 tbls lemon juice
- 1 can unsweetened coconut milk
- 1 14-oz chicken broth plus 1 chicken boullion cube
- 1 cup cooked rice
- 1 cup small white beans
- 2 bay leaves
- 2 large garlic clove, minced
- 1 tbls olive oil
- 3 cups cooked chicken
