Valaitis' Chicken Enchiladas

Ingredients

  • 4 large chicken breasts, boiled and diced
  • 6 or 8 corn tortillas
  • 1 can cream of mushroom soup
  • 8 oz. cheddar cheese, grated
  • 1 can cream of chicken soup
  • chopped onion
  • 1 can Rotel tomatoes
  • salt and pepper to taste

Preparation

Step 1

Boil and dice chicken and place about half in layer
in a large baking dish. Mix soups and Rotel
tomatoes together in bowl. Layer half of tortillas on
chicken, then pour about half of soup
mixture on top of tortillas, and about half of cheese.
Layer chicken, tortillas and soup again,
ending with cheese. Bake at 350 for about
50 minutes.
