Chile Baked fish with sweet potatoes

Ingredients

  • 2 medium sweet potatoes (peeled and sliced 1/4inch)
  • 1 Tbsp vegtable oil
  • 1 1/4 tsp salt divided
  • 1 can (14.5oz) no salt added diced tomatoes with juice
  • 1 large garlic clove halved
  • 1 canned chipotle chile pepper in adobo sauce
  • 1 tsp adobo sauce
  • 1 tsp sugar
  • 4 fish fillets (mahi mahi) 1 inch thick
  • 2 Tbsp cilantro

Preparation

Step 1

Heat oven 400 degrees. Put potatoes in microwaveable 8x8 baking dish. Drizzle with oil and sprinkle with 1/2 tsp salt. Toss to coat and spread in even layer. Cover with plastic and microwave for 6-8 minutes. Combine tomatoes, garlic, pepper and sauce, sugar and remaining 3/4 tsp salt in food processor. Puree. Lay fish in single layer over potatoes. Pour tomato mix over fish and bake 15-20 minutes. Serve with sprinkled cilantro.
