White Bean and Chicken Chili

  • 2 lbs ground chicken
  • 2 cans cannellini beans, rinsed
  • 1 onion, chopped
  • 4 cloves garlic, chopped
  • pinch of salt and pepper
  • oliveoil
  • 2 tsp chili powder
  • 1 TBSP fennel seeds
  • 1 TBSP oregano
  • 2 TBSP cumin
  • 3 TBSP flour
  • 1 1/2 cups frozen corn
  • 1/4 tsp red pepper flakes
  • swiss chard (leaf only)
  • 4 cups chicken broth



Step 1

In a dutch oven, heat olive oil. Add onion and garlic and cook until soft. Add salt and pepper. Add spices to onion and cook a few minutes. Add more olive oil and add chicken. Cook until chicken is done. Add little more salt. Add flour to chicken and cook for 1 minute. Then add beans, corn red pepper flakes. Chop and cut out rib of swiss chard. Add leaves to mixture. Add pinch of salt. Add chicken broth. Cover and cook for 50 minutes to 1 hour.
