Blueberry Vinegar

Ingredients

  • 3 cups fresh blueberries
  • 2 cups white wine vinegar
  • 2 Tbsp. honey

Preparation

1. In a stainless-steel or enamel saucepan combine 1/2 cups of the blueberries with vinegar. Bring to boiling; reduce heat. Simmer, uncovered, 3 minutes. Stir in honey. Remove from heat; cool. Pour mixture through a fine mesh strainer and let drain into a bowl. Discard berries.
2. Transfer vinegar to a clean 1-qt. jar or bottle. Add remaining 1/2 cups berries to jar or bottle. Cover tightly with nonmetallic lid (or cover with plastic wrap; tightly seal with metal lid). Chill at least 8 hours; strain and discard berries before using vinegar. Store strained vinegar in cool, dark place up to 2 weeks. Makes 2 cups.
