Long Boy Cheeseburgers

Ingredients

  • 2 (6”) sub rolls, split in half lengthwise
  • 1 1/4 cup cornflakes, crushed
  • 1/2 small onion, minced
  • 1/3 cup whole or lowfat milk
  • 6 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp minced fresh thyme
  • 1/2 tsp garlic powder
  • 1 large egg, lightly beaten
  • Salt and pepper
  • 1 1/2 lbs lean ground beef
  • 2 cups shredded cheddar cheese

Preparation

Step 1

1. Preheat oven for 450F and adjust rack to upper-middle position. Bake rolls, cut side up, on wire rack set inside rimmed baking sheet until golden and crisp, about 5 mins.

2. Combine cornflakes, onion, milk, 4 tbsp ketchup, Worcestershire, thyme, garlic powder, egg, ½ tsp salt and 1 tsp pepper in a large bowl. Add meat and knead gently until well combined.

3. Top the roasted rolls with meat mixture, spreading meat to the edges of rolls. It’s important to spread the meat to the edges of the rolls, or the bread will burn. Brush tops of meat with the remaining 2 tbsp ketchup and bake until meat is 160F, about 20-25 mins. Top burgers with cheese and continue to bake until cheese melts, 3-4 mins. Let rest for about 5 mins and serve.
