Ingredients

  • 8-10 yukon gold potatoes, boiled with 4 garlic cloves
  • 4T. butter
  • 1 cup sour cream, 1/4 cup herb and garlic cr. cheese
  • 1 pkg. frozen,chopped spinach
  • 1 pkg. frozen squash
  • 2 chopped green onions
  • 1 egg, beaten
  • 1 T. grated ginger2 cups grated cheese

Preparation

Step 1

Cook potatoes with garlic until tender, mash with milk, herb cr., butter, cheese, and salt and pepper.

Mix squeezed spinach with 1 T. butter, green onions, egg, s & p

Mix 1 pkg. frozen squash (drain off excess water)with 1T. butter, ginger, and salt.

oven to 350...butter casserole dish, spread a layer of potatoes, spinach, potatoes, squash, potatoes and top with cheddar. Bake 55=60 mins.
