Ingredients
- 1 cup softened butter
- 1/2 cup sugar
- 2 large egg yolks
- 1 tblsp lemon zest
- 1 tblsp lemon juice
- 1/2 teas salt
- 2 1/2 cups flour
- 1 cup lemon curd

Preparation
Step 1
Heat oven to 350 degrees.
Line 2 cookie sheets with parchment paper
Beat sugar and butter until well blended.
beat in yolks, lemon zest, lemon juice and salt
beat in flour just until moist clumps form--shape tablespoons of dough into 1 inch balls.
place balls 1 inch apart on cookie sheet
with a floured thumb make a deep indentation in the middle of each cookie
bake cookies until firm and golden on the bottom about 18 to 20 minutes
remove from oven and immediately fill indentation with lemon curd
return to oven and bake 2 more minutes
lightly dust with powderef sugar
