Thai Shrimp Curry

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 6 oz shiitake mushrooms
  • 3 garlic cloves, minced
  • 1 inch ginger, grated
  • 4 green onions, 1 inch pieces
  • 1 jar roasted red pepper, chopped
  • 2 T red curry paste
  • 1 c light coconut milk
  • 1 c peas

Preparation

Step 1

1) Cook shrimp. Add mushrooms, garlic, ginger, green onion, and red peppers. Cook 4 min.

2) Add curry paste and coconut milk and reduce heat to low for a few minutes.

3) Stir in peas and cook till warm.
