Ingredients
- 1 lb shrimp, peeled and deveined
- 6 oz shiitake mushrooms
- 3 garlic cloves, minced
- 1 inch ginger, grated
- 4 green onions, 1 inch pieces
- 1 jar roasted red pepper, chopped
- 2 T red curry paste
- 1 c light coconut milk
- 1 c peas
Preparation
Step 1
1) Cook shrimp. Add mushrooms, garlic, ginger, green onion, and red peppers. Cook 4 min.
2) Add curry paste and coconut milk and reduce heat to low for a few minutes.
3) Stir in peas and cook till warm.
