- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper 4 chicken breasts, skinless, cut into halves 4 chicken thighs, skinless

- 1 cup pearl onions, peeled
- 1 slice smoked ham 99% fat-free, 1/4" thick, cut into 1/4" cubes
- 1/4 pound small fresh button mushrooms (quartered, if they are bigger than 1/2" in diam
- 1 tablespoon fresh garlic, chopped
- 1 tablespoon fresh thyme leaves, chopped 1/2 cup brandy
- 2 cups dry red wine
- 1/2 cup chicken stock
- 2 tablespoons tomato paste
- 2 bay leaves
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped

In a large casserole (with a lid), heat the olive oil. Brown the chicken pieces until g brown on all sides. Remove the chicken pieces and set aside.
In the same casserole with the heated Oil, add the pearl onions and saute until golden hi Add the ham and mushrooms and saute for two minutes. Add the garlic and, when fra add the thyme and brandy and reduce for two minutes. Add the red wine, chicken tomato paste and bay leaves. Bring to a simmer and add the chicken pieces. Cover, cook slowly for about 35 minutes or until chicken meat comes off the bone easily.
Remove bay leaves. Adjust seasoning with salt and pepper to taste. Sprinkle with chopped fresh parsley and serve with mashed potatoes or egg noodles.
