Poached Eggs with Tomato and Basil

Ingredients

  • 1 small onion, chopped
  • 2 cloves garlic, crushed
  • 2 tbs. olive oil
  • 400 grams peeled and chopped tomatoes
  • 3 tbs. chopped basil
  • 2 tbs. parsley, chopped
  • Salt and pepper
  • 2 tsp. vinegar
  • 4 eggs

Preparation

Step 1

Fry the onion in garlic until soft. Add tomatoes and simmer for a few minutes, until slightly reduced. Add the herbs and seasonings. Put a high sided frying pan on high heat. Fill pan with salted water and vinegar. When water boils, break in eggs one at a time and reduce heat to simmering. When the white is cooked, put a spoonful of sauce on 4 dishes and place the egg on top.
