Blueberry Muffins

  • 1/2 cup margarine
  • 1 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 2 1/2 cups fresh blueberries
  • sugar to sprinkle on top



Step 1

1. Preheat oven to 375. Grease muffin cups or line with muffin liners.

2. In large bowl with mixer at medium speed, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.

3. Combine flour, baking powder and salt. Add alternatively to the creamed mixture with milk and vanilla.

3. Crush 1/2 cup blueberries and add to batter. Fold in remaining berries. Spoon into muffin tin. Sprinkle with sugar.

4. Bake for 30 minutes or until toothpick comes out clean.
