Roasted Garlic Viniagrette

Ingredients

  • 1 roasted garlic bulb
  • 1/2 teas. salt
  • 1/2 teas. freshly ground pepper
  • 1/4 cup white wine vinegar
  • 1 tab. Dijon mustard
  • 1/2 cup olive oil

Preparation

Step 1

Squeeze pulp from garlic bulb into a blender; add salt and next 3 ingredients. Process until smooth, stopping once to scrape down sides.
Turn blender on high; add oil in a slow, steady stream. Yield: 1 cup
