Sugar Cookies with Icing

Ingredients

  • Cookies:
  • 1/2 cup butter or margarine, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Icing:
  • 2 1/4 cups confectioners' sugar, sifted
  • 1/2 tsp vanilla extract
  • 1/3 cup milk
  • Food coloring, optional

Preparation

Step 1

Cream butter and sugar until light and fluffy. Beat in egg and extracts.

Sift together dry ingredients. Gradually add dry ingredients to creamed mixture, blending well. Wrap dough in plastic wrap and chill at least 1 hour.

Preheat oven to 400 F. On a lightly floured surface, use a floured rolling pin to roll out dough to desired 1/8-inch thickness. Cut out dough using desired cookie cutters. Place cookies on lightly greased baking sheets. Bake 8 to 10 minutes or until edges are lightly browned. Remove from sheets and cool on wire racks.

Ice and decorate cookies, if desired.

Icing: Combine all ingredients, blending until smooth. Dip tops of cookies in icing; place on wire racks to dry. If desired, divide remaining icing and add food coloring to icing, stirring to blend well. Spoon into decorator bags fitted with small round tips. Decorate tops of cookies.
