Mix Veg Curry

Mix vegetable curry is a simple & healthy dish usually make with freshly available seasonal vegetables.

Ingredients
- 2 carrots chopped
- 1/2 cup cauliflower separated into florets
- 1/2 cup french beans
- 1/2 cup green peas blanched
- 1/4 cup yogurt
- 1 cup fresh tomato puree
- 1/2 tsp cumin seeds
- 15-20 cashewnuts
- 2 green chillies chopped
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp coriander powder
- 1 tsp garam masala powder
- 1 tbsp fresh coriander leaves
- 1 tbsp oil
- Salt to taste
Preparation
Step 1
1. Heat oil in a deep pan. Add cumin seeds & when they begin to change
colour, add green chillies & stir it.
2. Add carrots, cauliflower, french beans & sauté for two minutes. Add one
cup of water & let it cook.
3. Soak cashew nuts in water for fifteen mins & then grind into a smooth
paste.
4. Add turmeric powder & red chilli powder into the pan & stir.
5. Add cashewnut paste & mix it well. Add tomato puree, coriander powder,
garam masala powder & stir. Cover & cook till the vegetables are almost
done.
6. Add green peas & let it simmer for four to five minutes.
7. Add yogurt, salt & mix. Simmer for 2 mins & take off the heat.
8. Garnish with coriander leaves & serve hot.
