Bacon Sweet Potato Hash

Ingredients
- 3 lg sweet potatoes
- 5 strips bacon
- 4 T lard or bacon fat
- 1 tsp sale
- 1 tsp pepper

Preparation
Step 1
1.
Peel ototaes and grate them.
2.
Chop the baon into 1-inch pieces.
3.
Heat a large dutch oven and fry bacon over medium heat.
Remove bacon but leave bacon fat.
4.
Add add'l 4 T lard and allow to melt.
5.
Add shredded sweet potatoes over medium heat, tossing to coat evenly.
6.
Add salt to help draw our moisture in potatoes.
Cook for approx 15 mins.
7.
Near end of cooking, add bacon.
