Step 1
Preheat oven to 425. Put rack in middle of the oven. Line bottom of baking pan with foil. Place fish, skin side down on foil. Using back of a spoon, spread evenly over top of fish, a bit of mayonnaise or Miracle Whip and season lightly with salt, pepper and garlic salt or powder. You can also sprinkle with a bit of dry bread crumbs, paprika and parsley for added colour. Bake thin fillets for 10-12 minutes, for thicker ones about 12-15 minutes or until fish flakes easily. When removing from pan, the skin will stick to the foil so you don’t have to remove it.
