Barbecued Rice

  • 1 cup whole rice
  • 1 small green bell pepper, chopped
  • 1 celery ribs, chopped
  • 1 small onion chopped
  • 2 tablespoons Worcestershire sauce
  • 1/2 teaspoon freshly ground black pepper
  • salt to taste
  • 1 1/2 cups chicken or beef stock
  • 2 1/2 cups canned French-fried onion rings, optional

1. Prepare the smoker for barbecuing, bringing he temperature to 200-227 degrees F.

2. In a smokeproof dish, combine the rice, with the bell pepper, celery, onion, Worcester sauce, pepper and salt. Pour the stock over the rice and cover the

3. Place the dish in the smoker and cook for about 1 1/2 hours, until most of the liquid is absorbed. Uncover the top and cook for an additional 15 to 25 minutes, or until rice is tender and all the liquid is absorbed.

4. Serve immediately or cover and keep warm for up to 1 hour. Stir in the onion rings just bfore serving, if you wish.
