Crab-Stuffed Fish

Ingredients

  • 1/2 cup butter
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 celery stalks, chopped
  • 1/4 red pepper, chopped
  • 4 slices toast
  • black pepper
  • 1/4 teaspoon thyme
  • 1 cup (8 ounces) crab meat
  • 1 tablespoon parley, chopped
  • 4 fish fillets
  • Juice of lemon

Preparation

Step 1

1) Saute onions, garlic, celery, and pepper in 2 tablespoons butter.

2) Butter the toast with 1 tablespoon of butter and chop until fine. Add to vegetables. Season with black pepper and thyme.

3) Fold in crab meat and add parsley.

4) Squeeze lemon juice on fillets. Arrange fillets with darker side up in a buttered baking dish. Pile with filling and fold fish over top. Dot with butter.

5) Bake for 20 minutes at 400 degrees.
