Black Eyed Pea and Sausage Stew

  • 16 oz. package smoked sausage links, halved lengthwise and sliced
  • 1 small onion, chopped
  • 1 medium green pepper, chopped
  • 1 (15 oz) cans black eyed peas, rinsed and drained
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1 (8 oz) can tomato sauce
  • 1 cup beef broth
  • 2-3 garlic cloves, minced
  • 1/4 tsp. Cajun seasoning
  • 1/4 tsp. ground cumin
  • 1/4 tsp. pepper
  • 1/8 tsp. salt
  • 1/8 tsp. cayenne pepper
  • 1-1/2 cups frozen corn, thawed
  • hot pepper sauce to taste

Step 1

In a large saucepan, sauté sausage, onion, garlic and pepper over medium heat until meat is browned and vegetables are tender. Drain if needed. Stir in the peas, tomatoes, tomato sauce, broth and seasonings. Bring to boil, then simmer for 15-20 minutes. Stir in the corn and cook 5 minutes longer or until heated through.
