Ingredients

  • Oil

  • Salt & pepper to taste

    medium potatoes, pre-cooked and cut in squares

    bay leaves

  • 2

    garlic cloves peeled

  • 4

    garlic cloves chopped

    lbs of Flank steak, (falda de res)

    chipotle chiles (canned is ok)

    lb tomatoes, roasted, peeled and seeded and chopped

    Chorizo (Mexican or cantimpalo) ( casing removed and sliced

    whole onion peeled

  • 2

    onions cut in half and then sliced

Directions

For meat Place meat, whole onion, garlic and bay leaves in a pot and add water to cover. Let boil and then reduce the heat and let cook for about 90 minutes or until the meat is tender For Tinga (putting it together) Heat the oil and add the chorizo and sauté until slightly cooked Add Onion and sauté Add the chopped tomatoes and the chipotle and let cook for about 10 minutes Add the pork or meat and the potatoes Mix really well and then season to taste and let simmer
