Mexico - Tinga Poblana 0 Picture


  • 2 onions cut in half and then sliced
  • 1 whole onion peeled
  • 4 Chorizo (Mexican or cantimpalo) ( casing removed and sliced
  • 1 lb tomatoes, roasted, peeled and seeded and chopped
  • 3 chipotle chiles (canned is ok)
  • 2-3 lbs of Flank steak, (falda de res)
  • 4 garlic cloves chopped
  • 2 garlic cloves peeled
  • 2 bay leaves
  • 3 medium potatoes, pre-cooked and cut in squares
  • Salt & pepper to taste
  • Oil


Servings 8


Step 1

For meat
Place meat, whole onion, garlic and bay leaves in a pot and add water to cover.

Let boil and then reduce the heat and let cook for about 90 minutes or until the meat is tender

For Tinga (putting it together)
Heat the oil and add the chorizo and sauté until slightly cooked
Add Onion and sauté
Add the chopped tomatoes and the chipotle and let cook for about 10 minutes
Add the pork or meat and the potatoes
Mix really well and then season to taste and let simmer
