Ingredients
- 12 oz skinless boneless chicken breast
- 1 medium onion cut in wedges
- 1 small broccoli cut in pieces
- 1 small zucchini sliced
- 8 oz fresh mushrooms quartered
- 1 small yellow squash
- 1 medium tomato cut in pieces
- 2 TB oil
- 2 TB lemon juice
- 2/3 cup chicken broth fat free, less sodium
- ½ packet Hidden Valley Ranch Dressing dry
- 8 cups cooked rice

Preparation
Step 1
Cut chicken into 2 inch pieces and set aside. In separate bowl, combine oil, lemon juice, chicken broth, and dressing. Add the chicken to the dressing mixture. Add cut up vegetables and stir to coat. Bake in 400 degree oven for 30 minutes until chicken is cooked through. Serve over 1 cup of rice.
