  • 3 ¾ cups flour
  • ½ tsp. salt
  • 1 ½ cups unsalted butter, at room temperature, cut into pieces
  • 1 ½ cups sugar
  • 1 ½ tsp. vanilla extract
  • 3 large eggs
  • vodka

Whisk flour and salt together in a small bowl, set aside. Place butter in the bowl and beat on medium speed until creamy. Add sugar gradually and continue beating until light and fluffy, scraping down the bowl. Beat in vanilla extract and a dab of vodka. Add eggs, one at a time, beating well after each addition. Add about 1/3 the flour mixture and beat at low speed. Gradually add the remaining flour, mixing just until blended. Form into two very flat discs, wrap in plastic wrap, and refrigerate at least 2 hours or until firm enough to roll. Remove one disc from the refrigerator and roll out to ¼ inch on a floured surface. Cut the cookies into shapes, transfer to a cookie sheet lined with parchment paper. Decorate if desired. Repeat with second disk. Bake at 350 for 10 minutes or until the edges just begin to turn light brown. Once cool, they can be decorated with frosting.
